Goan Stew: A Hearty and Delicious Recipe

A Comforting Dish for Any Occasion

Today we're going to be making Goan stew, a comforting and delicious dish that combines beef, pork, hearty vegetables, and macaroni simmering in a creamy gravy. This recipe is perfect for everyday meals or special occasions. Let's get started!

Ingredients:

  • 500g beef, cubed

  • 500g pork, cubed

  • 1 tsp. ginger paste

  • 1.5 tsp. garlic paste

  • 1 tsp. freshly cracked black pepper

  • Salt to taste

  • 1 cup of elbow macaroni

  • 2 tsp salt

  • 2 tbsp oil

  • 1.5 tbsp. butter

  • 10 peppercorns

  • 4 cardamoms

  • 6 cloves

  • 2 sticks of cinnamon (1.5 inches each)

  • 1 bay leaf

  • 3 cloves of garlic, finely chopped

  • 1-inch piece of ginger, finely chopped

  • 1 cup finely diced tomato

  • 1 finely chopped green chilli

  • 1 large red onion, coarsely chopped

  • 1 beef bouillon

  • 3 carrots, sliced

  • 3 medium-sized potatoes, cubed

  • 1 cup of frozen peas

  • 3/4 cup milk

  • 2 tbsp. cornflour

Instructions:

  1. In a bowl, mix the beef and pork cubes with ginger paste, garlic paste, black pepper, and salt. Let it marinate for a while.

  2. Cook the macaroni in a pot of boiling water with salt until it's almost fully cooked. Drain the water and drizzle some oil over the macaroni to prevent sticking. Set aside.

  3. In a pressure cooker, cook the marinated meat with one cup of water until the first whistle. Let it cool and release the pressure.

  4. In a heated pot, add oil and butter. Add the peppercorns, cardamoms, cloves, cinnamon sticks, and bay leaf. Sauté until the spices release their aroma.

  5. Add chopped garlic and ginger to the pot. Sauté them until they lose their raw flavor.

  6. Add diced tomatoes and chopped green chili. Cook until the tomatoes become soft.

  7. Add the chopped onion and sauté until translucent.

  8. Add the beef bouillon and sauté until it breaks down and mixes well with the onions.

  9. Add the cooked meat, sliced carrots, and cubed potatoes. Season with a little salt. Mix well and cover. Cook for 10 minutes on medium heat.

  10. Add the frozen peas and milk. Stir everything together.

  11. In a separate bowl, mix cornflour with a quarter cup of the preserved macaroni water to make a slurry. Add the slurry to the pot. Stir until the gravy thickens.

  12. Turn off the heat and add the cooked macaroni to the pot. Mix well.

  13. Let the stew rest for about five minutes before serving.
