Welcome to a brand new blog!

Hi everyone! Welcome back to a brand new episode with TradeFxP. Today, we have a special guest with us, Tina, who will be showing us her own take on broasted chicken. Tina's recipe is inspired by KFC chicken, and he'll be adding his own special masala blend to make it even more flavorful.

  • Chilli powder

  • Salt

  • Ginger-garlic paste

  • Flour

  • Breadcrumbs or panko powder or cornflake powder

  • Garlic powder

  • Onion powder

  • Mixed herbs (rosemary, oregano, thyme) or peri-peri mix

  • Eggs (for egg wash)

  • Cooking oil (avoid coconut oil for neutral flavor)

Instructions:

  1. Marinating the chicken:

    • In a bowl, combine the chicken pieces with a special fish fry masala, chilli powder, salt, and ginger-garlic paste.

    • Mix well to ensure each piece is coated evenly.

    • Marinate the chicken for 3-4 hours to infuse the flavors and tenderize the meat.

  2. Preparing the Coating Mixture:

    • In another bowl, mix flour, breadcrumbs (or substitute), garlic powder, onion powder, and mixed herbs.

    • If using a peri-peri mix, add it to the flour mixture.

  3. Coating the Chicken:

    • Dip each marinated chicken piece in flour, ensuring it is well-coated.

    • Then, dip it in beaten eggs for the egg wash.

    • Finally, coat the chicken with the breadcrumb mixture for a crispy exterior.

  4. Frying the Chicken:

    • Heat cooking oil in a deep fryer or deep pan.

    • Carefully add the chicken pieces, frying them one at a time to avoid overcrowding.

    • Fry until golden brown, ensuring the exterior is crispy and the meat is cooked thoroughly.

  5. Serving:

    • Serve the broasted chicken hot with your favorite dipping sauces or sides.

FAQs:

Marinating the chicken

Before we got started, my wife Tina had already marinated the chicken for about 3–4 hours. She used his own special fish fry masala (a secret she will never share, even with me), which is a versatile blend that can be used with chicken, mutton, and even fish. In addition to the masala, Tina added some chilli powder, salt, and ginger-garlic paste for extra flavor. The marination process ensures that the chicken is tender and infused with all the delicious spices.

Coating the chicken

Now it's time to coat the chicken for that crispy exterior. Hani has prepared a mixture of flour, breadcrumbs, and a variety of herbs and spices. If you don't have breadcrumbs, you can also use panko powder or even rough cornflake powder for that extra flakiness. The coating mixture includes garlic powder, onion powder, and mixed herbs like rosemary, oregano, and thyme. If you can't find these specific herbs, you can use a ready-made peri-peri mix or peri-peri powder for a different twist.

The Frying Process

Make sure your oil is hot enough before frying the chicken. Hani recommends using any typical oil but advises against using coconut oil as it has a stronger flavour. You can use a deep fryer or a deep pan for frying. The chicken should be coated with flour first, then dipped in egg wash to help the coating stick. Finally, coat the chicken with the breadcrumb mixture for that extra crunch.

When frying the chicken, be careful not to overcrowd the pan, as it can lower the oil temperature and result in soggy chicken. Fry the pieces one by one, allowing each piece to cook evenly. The chicken should have a golden brown colour when done, with a crispy exterior and tender meat inside. It's important to monitor the heat and avoid overcooking or burning the chicken.
